Starting on 6 May, Spasso will offer seven special dishes from the Calabria region in the South-West of Italy, courtesy of Chef Roberto. You will enjoy Sgombro marinato (smoked mackerel fillet, fennel salad, pine nut, red onion, cedar dressing) at THB 420++, Calamari ripieni (baby squid, cicerchia cream, semi-dried tomato, pickled anchovy, n’duja oil) at THB 450++, Involtini di spada e melanzana (swordfish rolls, grilled eggplant, roasted pepper pesto, wild rocket, crispy pecorino) at THB 450++, Pasta fagioli e cozze (ditali pasta, borlotti sauce, Mediterranean mussel, pancetta, Calabrian chili) at THB 590++, Fileja (handmade egg-free fileja, gobba sausage ragout, turnip tip, grated dry ricotta) at THB 590++, Costine di maiale (roasted Calabrian pork ribs, ciro reduction, carrot cream, red cipollotti, caria green bean) at THB 990++ and Stoccafisso (poached codfish, sila potato puree, ammacate olive, caper, wood-fired baked capsicum) at THB 1690++.
